Culinary Arts: Gazpacho

Welcome to online cooking school, students! Today’s culinary art is gazpacho. Gazpacho is a chilled soup that was brought to Spain by the Moors. It quickly became very popular in Andalusia and soon spread throughout Spain. Of course, the tomatoes weren’t added until later – probably in the eighteenth century. Even though Spain had been introduced to tomatoes some two hundred years earlier, most Europeans believed that the red fruits were poisonous. Once the Spaniards realized what they had been missing, tomatoes became a frequent ingredient in Spanish cuisine.
Gazpacho is a wonderfully refreshing dish on hot summer days. It’s also a great way to use fresh garden produce. It’s easy to make, and it’s a tasty way to include healthy vegetables into your diet.
My gazpacho recipe is a little different than some you might find. For one thing, I use lime juice instead of lemon juice. To me, the lime gives the soup a better flavor. Also, I use a can of beef broth to make the soup a little heartier. If you don’t like the taste of V-8 juice, use all tomato juice instead.
Gazpacho
What you’ll need:
1 can condensed beef broth
3 cups tomato juice
1 cup V-8 juice
1 ½ cups fresh tomato, seeded, peeled, and chopped
1 cup peeled, seeded, and chopped cucumber
1 cup finely chopped green bell pepper
1 tablespoon olive oil
¼ cup red wine vinegar
1 small onion, diced
2 celery ribs, chopped
1 teaspoon minced garlic
2 tablespoons fresh parsley, chopped
3 tablespoons lime juice
1 tablespoon sugar or Splenda
Tabasco sauce, to taste
Salt and pepper, to taste
Snipped chives and croutons for garnish
Directions:
Mix all ingredients except chives in a plastic or glass container with a lid. Refrigerate overnight to allow flavors to mingle. Just before serving, place in freezer to chill, but do not allow soup to freeze. Blend well and serve in chilled bowls, and top with chives and croutons.

In Spain, we leave it natural and vegetables only (no beef broth), just tomatoes (real red ones), onions, garlic, green peppers, a little olive oil and salt. That's it. Greeting from Spain and thanks for this hub.
