Holle's Chocolate-Raspberry BTS

If you’re one of my regular readers, you know that I love to cook and I love to eat. As we say here in the South, “Never trust a skinny cook!” No problem here. I enjoy tasting new dishes and then going home and trying to emulate them in my own Southern cooking kitchen, and I’ve gotten pretty darn good at this, if I do say so myself. Such is the case with this dessert.
Several years ago, fellow hubber Randy Godwin, his wife, my husband, and I spent several days on the Georgia coast. Hubby and I slept on our boat, and the Godwins camped in a nearby campground.
I don’t remember what month it was, but I do remember that it was cold. After several days of being constantly cold and damp and surviving on sandwiches, we decided to drive into Brunswick for a hot meal. We chose a seafood restaurant where I’d eaten before.
The restaurant was warm, cozy, and dry. It was the first time in days in days that we hadn't been freezing, so I reveled in the comfort. The shrimp and oysters we ordered for the main course were fried to perfection, and by the end of the meal, we were stuffed. We weren’t in a big hurry to leave, however, so we had after-dinner coffees.
As we were sipping our hot beverages, the waitress, in her distinct Southern drawl, mentioned the dessert bar. I wasn’t really interested, but since it was included in the price of the meal, I decided to have a look.
I passed the usual collection of pies, cakes, and cobblers, but then I noticed what I thought was one of my favorite desserts – chocolate delight. I decided to have just a taste, so I spooned a small portion on my plate and returned to the table.
As I placed a forkful of the chocolaty concoction in my mouth, I realized that this wasn’t your run-of-the-mill chocolate delight. This was something special! It was like several of my favorite desserts rolled into one. The crust was almost like Scottish shortbread, and the bottom layer was like cheesecake. In juxtaposition to the sweet, creamy layer was a layer of tart raspberries. On top of that was a layer of chocolate pudding, Irish cream, and shaved chocolate. If I ate only the berries and pudding together, I experienced the taste of chocolate-covered raspberries. And as if all that weren’t enough, the dish was finished off by a layer of whipped topping.
I just had to find out what this delicious dessert was, so I motioned to our middle-aged waitress. This was the conversation that ensued:
Me: “What is this stuff?”
Waitress: “That? Oh, why it’s called BTS, shugah.”
Me: “BTS? What’s BTS?”
Waitress: “Stands for Bettah Than Say-ex, hon!”
And OMG, I think she was right! Here’s the recipe:
Holle’s chocolate-raspberry BTS
What you’ll need:
1 stick butter, softened
1 cup all-purpose flour
½ cup granulated sugar
1 cup chopped pecans
1 block cream cheese (8 ounces), softened
1 cup powdered sugar
1 large container whipped topping
½ teaspoon vanilla
1 ½ cups fresh raspberries
2 small packages (4-serving size) instant chocolate pudding
1 small package instant dark chocolate pudding
3 cups cold milk
1/4 cup Bailey's Irish cream
1 small Hershey bar, grated
Directions:
Blend together the butter, flour, granulated sugar, and nuts to make the crust. Press into a 9 x 13 baking dish or into 2 deep pie plates. Bake at 375 degrees for 15 minutes. Cool.
Next, blend together the cream cheese, one cup of the whipped topping, the powdered sugar, and vanilla, until smooth. Spread on the crust and refrigerate.
When the cream cheese mixture is firm, top with the raspberries.
Next, mix the dry puddings with 3 cups of cold milk and the Bailey's, and add the grated chocolate bar. Pour over raspberries and refrigerate.
When the pudding is firm, spread with remaining whipped topping.

I was wondering what the BTS stood for! Now it's obvious. Yes this concoction is actually BTS. It's even good when you take out half of the sugar and use the sugar free pudding mixes. Still not calorie free, but there are no skinny cooks or dessert connoisseurs!

Holles Chocolate Raspberry is fantastic, chocolate and raspberries you can't go wrong with that. I grow my own raspberries have a bumper crop of them and their ever berries which means as long as you pick em they keep coming. I pick them all summer everyday now where's the chocolate must find the chocolate... :)
