Holle's Red Beans, Sausage, and Rice

Yesterday afternoon, I was busy on the computer when Johnny came in the office to ask what we were doing for lunch…or for dinner. It was between the two meal times, and neither of us had eaten anything all day. Of course, his query actually translated into “When the hell are you gonna get off the computer and fix me something to eat?” That’s what he really meant, but he knew that wouldn’t get him very far with me. I’m the type of person who can be lead a mile but not pushed an inch.
Anyway, I finally pried myself from my computer chair and dragged myself into the kitchen. I’d put off going to the grocery store, so we were out of almost everything. I stood staring into my open kitchen cabinets and saw a can of diced tomatoes and some kidney beans. I thought about chili until I remembered we had no ground beef. I went to the fridge, and the only meat we had there was some sausage. An idea began to form…and it turned into a great dish! I can't decide if it's cajun food, Creole food, or soul food. I really don’t know what to call it, so I’ll just call it what it is…or was: Red beans, sausage, and rice.
What you’ll need:
1 ½ cups white rice
3 cups water
1 cube chicken bullion
1 tablespoon butter
1 can diced tomatoes, with liquid (I used Italian diced tomatoes)
½ cup diced onions
½ cup diced bell pepper
1 pound spicy smoked sausage links, sliced (I used Conecuh sausage)
1 teaspoon minced garlic
1 can dark red kidney beans, drained
1 teaspoon ground red pepper
1 teaspoon paprika
Salt and black pepper, to taste
Sausage drippings, optional
Directions:
Cook the rice in water the way you normally would, but add 1 cube chicken bullion and a tablespoon of butter.
While the rice is cooking, fry the sausage, onions, bell pepper, and garlic.
When the rice is almost done, add the kidney beans and the tomatoes and the juice from the can.
When the sausage and vegetables are done, add them to the rice.
Add the spices and stir. Cover tightly until all the liquid has been absorbed.
If you want this dish to taste even better, add a little of the sausage drippings from the skillet!
You can adjust the amount of spice you like to make it hotter or milder.
This dish is great when leftovers are warmed up in the microwave, too, as Hamlet and I discovered at around 2 a.m. this morning. He gives it two paws up!

Most of it is not very good, but I have found my favorites: red beans and rice w/ sausage, chili, chicken salad, italian herb pizza, creamy mashed potatoes, sloppy joes, and several chocolate dessert bars! After nearly 5 months I'm getting burned out of it, though. I have about 4-5 weeks of food left and I won't be continuing due to the expense and the fact that I haven't lost anything in over a month - I could write a whole hub here about that but I won't!

I loved the intro to get you to make dinner habee - beans and rice are great, doesn't matter if they are Cajun or creole IMO they are all good and quick and easy - and full of protein and fiber. Good and healthy - well I do like to add sausage etc and end up with a Jambalaya :)

You gotta love it though - what is for dinner? It's spoken like they actually mean THEY are going to do something about this but it's not quite that way! Bob's idea of cooking dinner is throwing some sausages on the grill or HB's, or running down to the Mexican joint and picking up dinner....I usually cook several days 'out' just so I never have to answer the question 'what's for dinner'....it drives me crazy. I know the guy can read - he could actually make food! When I'm sick, I get soup in a can - when he's sick, he gets gourmet chicken soup....sigh - it's just a really good thing I love him for so many other things! Oh - and great recipe by the way!!! My son Pat loves rice and beans so will have to recreate this for him next time he's in my house.....
