Low Carb Recipes: Holle's Low Carb Lasagna

Are there really low carb recipes for lasagna? Well, I created my own just yesterday, and it was great! I’m sure you’re wondering how lasagna recipes can be low carb recipes. After all, one of the ingredients is pasta, in the form of wide lasagna noodles, right? Ah, but I didn’t use those high carb noodles. I found something else to use instead, and honestly, this lasagna was as good as any I’ve ever eaten. It was also pretty quick and easy to make, especially when compared to the traditional lasagna with noodles. My lasagna is going to be one of my low carb recipes that I make often, and even my hubby loves it!
Okay, so what did I use instead of the noodles in my low carb lasagna? I used low carb tortillas made by Xtreme Wellness! Each tortilla has only five net grams of carbs, and they’re loaded with fiber. You can use any flavor, but I used the tomato-basil low carb tortillas for my noodles. I cut them into strips with my kitchen scissors. I made a big pan of lasagna and used only three tortillas. My lasagna would probably serve about ten people.
Another ingredient that has a lot of carbs in traditional lasagna is the tomato paste. It’s loaded with carbs and sugar. Because of this fact, I didn’t use any tomato paste in my low carb lasagna. Instead, I used crushed tomatoes, which have only one net gram of carbs per serving. I did use tomato sauce, which has about sixteen grams of carbs per serving. Still, the tomato sauce is better than tomato paste, as far as carbs are concerned. If you want to make the low carb lasagna even lower in carbs, substitute low carb ketchup for the tomato sauce.
Cheeses are inherently low in carbs. You’ll get one or two carbs per serving from ricotta cheese in my low carb lasagna. Mozzarella cheese has only gram of carbs per serving, and the ground beef and the grated parmesan both have zero carbs. Here’s my low carb lasagna recipe:
Holle’s Low Carb Lasagna
What you’ll need:
One large can crushed tomatoes
Two cans tomato sauce
Basil, to taste
Minced garlic, to taste
Splenda, to taste
One pound extra-lean ground beef
One large onion, diced
23 ounces ricotta cheese
Two egs, beaten
½ teaspoon Lowry’s garlic salt
Mozzarella cheese, shredded
Parmesan cheese, grated
Xtreme Wellness low carb tortillas – I used three, cut into strips
Directions: Combine crushed tomatoes, tomato sauce, basil, garlic, and Splenda and simmer over medium-low heat.
Meanwhile, brown ground beef and onions. Season with salt and pepper, if you wish.
While the meat is cooking and the sauce is simmering, blend together the ricotta cheese and the eggs. Add the garlic salt and stir.
When the beef is cooked, add it and the sautéed onions to the tomato sauce. Now you’re ready to assemble your low carb lasagna.
In a lasagna pan or other deep pan, spoon in a layer of the tomato mixture. Cover with a layer of tortilla strips. Spread with half the ricotta mixture. Cover with mozzarella. Repeat the layers. On top, add the remaining sauce and sprinkle with mozzarella and parmesan.
Bake uncovered at 350 degrees for 45-55 minutes. Let stand a few minutes before serving.

Hi Habee, just wondering if this is low in salt and if diabetics could eat this? Sorry I haven't been around for a couple of weeks but I had to go to the ER a couple of weeks ago and since then I have had to go on high blood pressure medicine and possible diabetes meds, should have the results of that test tomorrow. I am new to all these things but this sounded so good lol and it looked delicious. I just know I don't ever want to feel the way I did when I went to the ER. I am just now getting most of my strength back and my vision is getting a little clearer everyday due to the meds. Anyway, just wondering if this would be something I would be able to eat? Nana, sorry to hear about your health problems. Since this is a low carb recipe, I think it's fine for diabetics. I've never checked the sodium level. Maybe use low-sodium cheese and crushed fresh tomatoes?
